Ingredients Directions
  1. Pour the oil in a nonstick skillet and place over medium high heat. Saute the pepper and onion for 3 minutes.
  2. Mix in the cumin and saute for 1 minute.
  3. Stir in the turkey and tomato. Cook for 3 minutes. Add the cilantro, salt, and black pepper.
  4. Place 1/2 cup of the mixture onto half of each tortilla. Sprinkle the cheese on top then fold the tortilla in half.
  5. Spray a nonstick skillet with the cooking spray and set over medium high heat. Cook 2 tortillas for 30 seconds then turn over and cook for another 30 seconds. Repeat with the remaining tortillas.
  6. Cut each tortilla into 3 wedge.
