1 each  cooking spray
2 tsp  olive oil
16 oz  boneless skinless chicken breasts
1 each  chopped green bell peppers
14 1/4 oz  canned stewed tomatoes
2 tsp  hot pepper sauce
0.3333 cup  fresh cilantro
0 1/2 tsp  ground thyme
1 pinch  hot pepper sauce
1 pinch  fresh thyme
  1. Spray a nonstick skillet with the cooking spray. Heat the oil over medium-high heat.
  2. Cook the chicken for 2 minutes then turn over and cook for 2 minutes longer.
  3. Mix in the pepper, tomatoes, hot sauce, 1/4 cup cilantro, and dried thyme. Bring just to a boil then decrease the heat. Simmer, covered, for 5 minutes. Then simmer, uncovered, for 10 minutes.
  4. Add the rest of the cilantro. Garnish with thyme sprigs. Serve with extra hot sauce on the side.
