1 cup  Millet, hulled
2 cup  low fat unsalted chicken broth
0.125 tsp  salt
2 tsp  sesame oil
1 each  medium celery stalk
4 each  fresh green onions
8 oz  canned water chestnuts
1 tbsp  low sodium soy sauce
1 pinch  black pepper
1 tbsp  slivered almonds
  1. Toast the millet in a nonstick saucepan. Mix in the broth and bring just to a boil. Decrease the heat and simmer for 25 minutes. Turn the heat off, cover, and let sit for 5 minutes.
  2. Heat the oil in a nonstick skillet. Sauté the celery and onions for 3 minutes. Stir in the water chestnuts and soy sauce. Cook until heated through. Add the millet, sprinkle with pepper, and top with the almonds if desired.
