1 lb  fresh artichokes
0 1/4 cup  fresh chopped red onion
1 lb  fresh green beans
3 each  medium garlic cloves
3 tbsp  walnut oil
0 1/2 cup  chopped red bell peppers
2 tbsp  fresh lemon juice
2 tbsp  chopped walnuts
1 pinch  black pepper
  1. Fill large pot with water and bring to boil. Gently drop artichokes in boiling water and cook 10 minutes.
  2. Add green beans and cook for another 3 to 4 minutes. Drain.
  3. In large skillet, heat walnut oil over medium. Sauté onion and garlic for about 1 minute. Add bell peppers and cook until heated through.
  4. Add artichokes and green beans to skillet. Toss with lemon, pepper, and walnuts. Serve.
