1 lb  haddock fillet
0 1/4 cup  fresh lemon juice
0 1/2 tsp  vegetable oil
2 each  medium garlic cloves
0 1/4 cup  chicken broth, low sodium
1 pinch  black pepper
4 each  Mushrooms, fresh, large
1 each  medium carrots
2 tsp  spearmint, dried
  1. Preheat the oven to 350 degrees F.
  2. Put the fillets in a 9-inch casserole dish. Pour the lemon juice in the dish and coat both sides of the fish and marinate for 10 minutes.
  3. Heat the oil in a nonstick skillet and saute the garlic. Place garlic on top of fish, and add the chicken broth, pepper, mushrooms, carrot, and mint to the baking dish.
  4. Cover the dish with foil and bake for about 25 to 35 minutes.
