Heat a cooking spray coated frying pan over medium heat. Saute onions, broccoli, and carrots 4 to 5 minutes or until crisp-tender. Add in peanut sauce, broth, and cornstarch and bring to a boil. Continue boiling 1 minute, whisking continually or until thick.
Combine vegetable mixture with rice and top with cilantro, peanuts, and flaked coconut.
