2 cup  white all purpose flour
3 tsp  low sodium baking powder
0 1/4 tsp  salt
0.3333 cup  Shortening, vegetable
0 3/4 cup  lowfat milk
0 1/2 lb  Bacon, cured, pan fried
0 3/4 cup  Cheese, cheddar, sharp, shredded
  1. Mix together flour, baking soda, and salt. Using 2 knives or a pastry cutter, cut in shortening. Pour in milk and fully combine.
  2. Place dough on a floured surface and knead 6 to 8 times. Roll out into a 16 by 10 inch rectangle. Top dough with bacon and cheese.
  3. Roll dough in jelly roll fashion and slice into 15 pieces. Arrange cut side down in cooking spray coated muffin tins.
  4. Bake at 450 degrees F for 12 to 15 minutes.
