1 1/4 cup  Soda, cola, diet
1 cup  Dates, pitted
0 1/4 cup  brown sugar substitute, granulated
0 1/2 cup  SPLENDA® No Calorie Sweetener, granulated
2 tbsp  walnut oil
0 1/2 cup  ground almonds
0 1/2 cup  whole wheat flour
0 1/2 cup  Flour, oat, whole grain
1 tsp  low sodium baking powder
1 tsp  baking soda
1 each  eggs
1 tsp  vanilla extract
0 1/4 cup  sliced almonds
0 1/4 tsp  ground cinnamon
1 each  cooking spray
  1. Preheat oven to 350 degrees F and line a long loaf pan.
  2. Put cola in a small saucepan and bring to a boil. Remove from fire, stir in dates and mix well until consistency is smooth. Add sugar substitutes and oil; mix.
  3. Combine dry ingredients. Add to date mixture 1 cup at a time, stirring well between additions.
  4. Beat egg well and add to mixture with the vanilla, almonds, and cinnamon.
  5. Pour mixture into loaf pan and bake for 30-35 minutes. Test with a toothpick until it comes out clean.
  6. Cool, wrap well and freeze or keep refrigerated. Slice when cold.
