0 1/2 cup  Marmalade, orange
2 each  scallions
1 tbsp  dijon mustard
2 tsp  fresh lemon juice
0 1/4 tsp  hot red pepper flakes
4 each  boneless skinless chicken breasts
0 1/2 tsp  salt
  1. Coat the rack of a broiler pan with cooking spray. Preheat broiler.
  2. Combine marmalade, scallions, mustard, lemon juice, and red pepper.
  3. Season chicken with salt. Arrange chicken on broiler rack and coat with half the marmalade mixture.
  4. Broil 4 minutes, per side, brushing with the rest of the marmalade while cooking.
