24 oz  tilapia fillets
2 tbsp  olive oil
1 tbsp  fresh lemon juice
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  fresh tomatoes
4 oz  stuffed green olives
2 tbsp  fresh basil
1 tbsp  capers
  1. Preheat grill or oven to 450 degrees F.
  2. Arrange 1 fish fillet on each of 4 large pieces of aluminum foil. Coat fillets with 1 tablespoon oil and lemon juice; season with salt and pepper. Enclose the fish in foil, forming packets.
  3. Combine 1 tablespoon oil, tomatoes, olives, basil, and capers.
  4. Place fish packages on a grill or baking sheet. Grill, covered or bake 6 to 10 minutes or until fish is opaque. Open packages, move to plates, and garnish with relish.
