1 1/4 cup  part skim ricotta cheese
0 1/4 cup  fresh lemon juice
2 tbsp  sugar
1 tbsp  fresh lemon peel
4 each  Crepe
  1. Combine ricotta cheese, lemon juice, sugar, and lemon zest in a small bowl.
  2. Spoon 1/4 of the cheese mixture onto the center of each crepe.
  3. Roll up the crepes to close.
