Using a food processor or blender, puree shrimp, cream cheese, and mayonnaise until finely chopped. Blend in lime juice, fish sauce, and tofu.
Pour oil in a frying pan and heat over medium heat. Cook ginger and garlic 2 minutes. Blend ginger and garlic into shrimp mixture and pulse until well combined. Blend in onions and cilantro. Scrape mixture into a bowl and chill at least 1 hour, covered. Serve dip with extra shrimp and top with cilantro sprigs.
