3 1/2 lb  whole chicken, raw
0 1/4 cup  fresh chives
3 tbsp  white wine vinegar
2 tbsp  capers
2 tsp  fresh thyme
1 tsp  fresh oregano
4 tsp  extra virgin olive oil
0 1/2 tsp  salt
0 1/2 tsp  black pepper
1 each  medium garlic cloves
  1. Add chicken to a pot of boiling water. Place lid on and simmer for 50 minutes over low heat or until soft. Strain, saving liquid for another use. Let cool.
  2. Peel chicken off of skin and dispose of skin. Take chicken off of bones, disposing of bones and extra fat. Coarsely chop chicken.
  3. Mix chicken with chives, vinegar, capers, thyme, oregano, oil, salt, pepper, and garlic.
