Cut turkey tenderloin in half horizontally. Lightly coat the unheated rack of a broiler pan with cooking spray. Arrange turkey and pineapple on a rack. Broil for 8 to 10 minutes or until turkey is done. Turn turkey and pineapple once.
To serve, place lettuce on plates. Cut turkey into bite size pieces. Place turkey, pineapple, jicama, and carrot on lettuce.
In a small bowl, stir together yogurt, pineapple juice, curry powder, and pepper for the dressing. Top the salads with dressing.
