Ingredients Directions - In microwave-safe bowl, whisk tapioca, sweetner, egg, milk, and sugar, if desired.
- Microwave for 3 minutes on high.
- Whisk together again and microwave for 2 additional minutes or until mixture begins to boil.
- Stir in vanilla extract.
- Divide between 4 small dessert bowls.
- Cover with plastic wrap or waxed paper. Allow to cool at room temperature or in refrigerator at least 20 minutes. Mixture will thicken.
- Remove from refrigerator, stir and spoon berries on top.
