1 each  butter flavored cooking spray
0 1/2 cup  white all purpose flour
1 1/2 tsp  low sodium baking powder
0 1/4 tsp  baking soda
4 each  dried apricots
0.125 tsp  caraway seeds
0 1/4 cup  Buttermilk, low fat, 1%, cultured
1 tbsp  liquid egg substitute
  1. Preheat the oven to 350 degrees Fahrenheit. Spray a baking sheet with the cooking spray.
  2. Mix the flour, baking powder, and baking soda together in a bowl. Add the apricots and caraway seeds. Mix in the egg substitute and buttermilk and stir until all of the ingredients are moist.
  3. Sprinkle a small amount of flour on a cutting board and knead the bread for about 1 to 2 minutes. Make 2 even round loaves. Use a knife to make an X on top of each loaf.
  4. Bake the bread on the baking sheet for 15 minutes or until slightly brown. Let cool for 10 minutes before cutting.
