8 oz  catfish fillets (wild)
0 3/4 cup  fat free milk
0 1/2 cup  yellow cornmeal
0 1/2 tsp  black pepper
0 1/4 tsp  chili powder
0 1/4 tsp  ground thyme
0.125 tsp  ground cumin
0.125 tsp  ground cayenne (red pepper)
1 pinch  salt
1 1/2 tbsp  Margarine, 80% fat, unsalted
1 each  medium lemons
  1. Preheat the oven to its highest temperature. While the oven is warming up, let the fillets sit in milk.
  2. Combine cornmeal, pepper, chili powder, thyme, cumin, cayenne pepper, and salt in a shallow dish. Dredge the fillets in the mixture. Pat both sides down to make sure they absorb the mixture.
  3. Pour half of the margarine in the bottom of the pan. Set the fillets in the pan and pour the rest of the margarine on top. Bake for approximately 8 minutes. Serve with the lemon wedges.
