3 tbsp  cooking sherry
2 tbsp  orange juice
2 tbsp  low sodium soy sauce
2 each  medium garlic cloves
2 each  scallions
0.6667 oz  fresh ginger root
1 tsp  grated orange peel
0.125 tsp  hot red pepper flakes
8 oz  flank steak
Directions
  1. In small mixing bowl, combine sherry, orange juice, soy sauce, scallions, ginger, orange zest, and red pepper flakes.
  2. Score each steak with 1/8" deep diagonal lines. Place steaks in shallow baking dish, add sherry mixture.
  3. Coat both sides of steak with marinade. Cover and refrigerate about 15 minutes.
  4. Preheat grill to 400°F.
  5. Grill steaks 3 minutes per side, turning once.
  6. Remove steaks from grill, place on cutting board. Let stand 3 minutes.
  7. Cut diagonally into thin slices, serve.
