Ingredients Directions
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Boil a pot of water then cook the spinach for 1 minute. Drain and squeeze the moisture out of the leaves.
  3. Situate 3 spinach leaves on top of each chicken breast. Leave a 1/2 inch border around the edge.
  4. Sprinkle the lemon juice, feta cheese, and pepper on top.
  5. Roll each chicken into a cylinder and place a toothpick in each end to hold it closed.
  6. Dredge the chicken in the flour and dust off any excess flour.
  7. Spray a nonstick skillet with the cooking spray and heat over medium high heat.
  8. Saute the chicken for approximately 5 minutes, browning every side.
  9. Put the skillet in the oven and bake the chicken for about 15 to 20 minutes.
  10. Remove the chicken from the oven, take the toothpicks out, and slice them crosswise into 1/2 inch slices.
