1 1/2 cup  fresh cranberries
1 cup  sugar
1 tsp  grated orange peel
1 1/2 cup  white all purpose flour
2 tsp  low sodium baking powder
0 1/2 tsp  salt
1 each  eggs
0 1/4 cup  orange juice
0 1/4 cup  fat free milk
3 tbsp  margarine
0 1/4 cup  chopped pecans
  1. Preheat oven to 400 degrees.
  2. Lay cranberries in a cooking spray coated 8 inch square baking pan and top with 1/2 cup sugar and the orange rind.
  3. Combine the rest of the sugar, flour, baking powder, salt, egg, orange juice, skim milk, margarine, and pecans.
  4. Spoon mixture overtop of cranberries, spreading evenly.
  5. Bake batter 25 to 30 minutes or until a toothpick comes out clean. Flip out of pan and slice.
