4 oz  pine nuts
0 1/2 tsp  ground tarragon
0 1/2 tsp  fresh lemon peel
0 1/4 tsp  ground nutmeg
0.3333 cup  extra virgin olive oil
0.3333 cup  white wine vinegar
1 1/2 lb  fresh baby spinach
1 pinch  salt
  1. Toast pine nuts in a frying pan over medium heat for 2 minutes, until nuts are lightly browned; shake pan often. Take nuts out of pan, let cool, and chop.
  2. Mix together toasted nuts, tarragon, lemon peel, nutmeg, oil, and vinegar.
  3. Season spinach with salt and toss with dressing.
