1 each  cooking spray
4 tbsp  margarine
0 1/4 cup  unsweetened applesauce
2 each  eggs
2 tbsp  fat free milk
0 3/4 cup  packed brown sugar
1 cup  fresh mashed banana
1 3/4 cup  white all purpose flour
2 tsp  low sodium baking powder
0 1/2 tsp  baking soda
0 1/4 tsp  salt
0 1/4 cup  chopped walnuts
  1. Preheat oven to 350 degrees F. Coat an 8 x 4 x 2 inch loaf pan with cooking spray and set aside.
  2. Using electric beaters, mix margarine, applesauce, eggs, milk, and brown sugar until smooth. Beat in banana at low speed, then on high speed for 1 to 2 minutes.
  3. Mix flour, baking powder, baking soda, and salt. Gradually add dry ingredients into wet ingredients. Stir in nuts and spoon batter into prepared loaf pan.
  4. Bake 55 to 60 minutes or until bread is lightly browned and a toothpick comes out clean. Let bread cool 10 minutes in pan, then flip out of pan and let cool another 5 minutes.
