2 tbsp  olive oil
3 cup  fresh chopped onion
1 1/2 cup  chopped red bell peppers
1 1/2 each  chopped green bell peppers
4 each  medium garlic cloves
0 1/2 cup  fresh cilantro
1 tbsp  tomato paste
0 1/4 tsp  salt
0 1/4 tsp  black pepper
  1. In large skillet, heat oil over medium-high.
  2. Add onions and sauté 1 minute. Add peppers and garlic, cook 10 minutes, stirring often.
  3. Add cilantro, tomato paste, salt, and pepper. Stir until well blended.
