1 1/2 cup  fresh diced pineapple
0 1/2 cup  rice vinegar
0 1/2 tsp  curry powder
1 each  medium garlic cloves
1 tsp  white pepper
36 oz  Fish, salmon, Atlantic, wild, fillet, raw
1 tsp  kosher salt
1 tbsp  ground cinnamon
1 tbsp  ground coriander
1 tbsp  black pepper
1 tbsp  ground allspice
1 tbsp  cardamom, ground
1 tbsp  ground cloves
1 tbsp  ground ginger
1 1/2 tbsp  vegetable oil
  1. Add pineapple, vinegar, curry powder, and garlic in a pot and bring to a boil. Lower heat, simmer 5 minutes.
  2. Take pot off of heat and let cool. Using a food processor or blender, puree mixture until smooth. Mix in cracked pepper and set mixture aside.
  3. Take skin off of salmon and season with salt.
  4. Mix cinnamon with pepper, allspice, cardamom, cloves, and ginger. Massage mixture onto salmon on one side.
  5. Pour oil in a frying pan and heat over medium high heat. Place salmon in pan, spice side down and cook 4 minutes per side or until salmon is flaky. Spoon pineapple sauce overtop.
