3 each  medium pears
2 cup  apple juice
1 oz  fresh ginger root
8 oz  pear juice
2 tbsp  chopped hazelnuts
  1. Bring the pears, apple juice, and ginger to a boil in a large pot.
  2. Lower heat, cover, and simmer until the pears are tender, about 5 minutes.
  3. Remove the mixture, in batches, into a blender and puree.
  4. Return puree to pot and stir in the pear juice. Warm over low heat and serve topped with hazelnuts.
