0 3/4 cup  fresh diced pineapple
0 1/4 cup  fresh chopped red onion
1 tbsp  sliced jalapeno pepper
1 tbsp  fresh cilantro
1 tbsp  cider vinegar
0 1/4 oz  honey
1 oz  fresh mint
2 tbsp  fresh lime juice
0 1/4 tsp  salt
0 1/4 tsp  chili powder
24 each  large raw shrimp
1 each  cooking spray
4 pinch  fresh cilantro
  1. Preheat grill.
  2. Mix pineapple, red onion, pepper, cilantro, vinegar, and honey in a bowl and reserve.
  3. Whisk together mint, lime juice, salt, and chili powder. Toss in shrimp. Thread 3 shrimp on each of 8 skewers. Arrange shrimp on a cooking spray coated grill rack and grill 1 1/2 minutes per side. Serve with salsa and top with cilantro sprigs.
