2 each  eggs
1 each  cooking spray
2 tsp  sesame oil
2 each  medium garlic cloves
1 tsp  fresh ginger root
2 cup  Rice, brown, medium grain, cooked
1 1/2 cup  Vegetables, mixed, Asian blend, frozen
2 each  scallions
2 tbsp  low sodium soy sauce
1 tbsp  mirin
0 1/4 tsp  salt
  1. Cook the lightly beaten eggs in a cooking spray coated skillet over medium-high heat, and stir occasionally until the eggs are firm, 2-3 minutes.
  2. Place the eggs in a small bowl.
  3. In the same skillet, heat the oil and sauté the garlic and ginger until fragrant, about 30 seconds.
  4. Mix the rice and vegetables with the garlic and ginger.
  5. Cook, stirring occasionally, 3-5 minutes. Add the eggs, scallions, soy sauce, mirin, and salt; continue to cook until hot, about 2 minutes.
