1 lb  Beef, shank, crosscut, raw, choice, 1/4" trim
3 cup  low sodium beef bouillon
3 cup  cold water
1 each  medium onions
1 cup  sweet potatoes, cubed
2 each  medium celery stalk
3 each  medium tomatoes
0 1/2 tsp  ground cumin
0.3333 cup  barley, pearl
2 tbsp  chopped parsley
1 pinch  salt and pepper
  1. In a 5-quart nonstick Dutch oven, brown beef cubes over medium heat.
  2. Put in beef bouillon or broth, cover, and cook 25 minutes.
  3. Meanwhile, prepare remaining ingredients.
  4. Add the rest of ingredients to Dutch oven.
  5. Cover and simmer for 1 hour, or until vegetables are tender.
