1 each  small onions
6 each  medium russet potato
2 each  eggs
2 each  egg whites
1 tbsp  fat free reduced sodium chicken broth
2 tbsp  whole wheat flour
1 pinch  salt and pepper
  1. Preheat oven to 500 degrees F. Chop onion with knife attachment in a food processor until very fine. Switch to the grating disc and grate potatoes.
  2. Squeeze well in a colander to drain all excess water. Transfer to a mixing bowl.
  3. By hand, mix in the broth and flour. Season with salt and pepper.
  4. Pour into an 8 x 8-inch baking pan lined with baking paper. Spray the top with non-stick spray. Bake 20 minutes, until it starts to turn golden. Lower heat to 325 degrees F and bake for another 30-40 minutes.
