1 tbsp  olive oil
12 oz  fresh mushroom slices
1 each  medium shallots
0 1/4 cup  cooking sherry
4 cup  fresh broccoli florets
0 1/2 tsp  kosher salt
0 1/2 cup  low sodium chicken broth
0 1/4 tsp  black pepper
  1. In large skillet, heat oil over medium. Add mushrooms and shallots, cook 8 minutes or until mushrooms are golden.
  2. Add sherry and cook 2 minutes, or until liquid is absorbed, stirring often.
  3. Remove mushrooms from skillet with slotted spoon. Set aside.
  4. Add broccoli, salt, and broth. Bring to boil, reduce heat to simmer, cover, and cook 10 minutes or until broccoli is crunchy but soft.
  5. Return mushrooms to skillet. Add salt and pepper. Toss vegetables to mix. Serve
