Sweet beets with a honey sauce topped with walnuts and raisins.

1 1/2 lb  fresh whole beets 1.0
1 each  cooking spray 2.0
2 each  red onion 4.0
4 tbsp  honey 2.0
2 tbsp  red wine vinegar 1.0
1 tbsp  canola oil 3.0
3 tsp  garlic cloves, chopped 0.25
0 1/4 cup  seedless raisins 3.0
3 tbsp  chopped walnuts 1.0
1 pinch  salt 1.0
1 pinch  black pepper 1.0
1 pinch  chopped parsley

1. Combine beets and water in a pot and simmer for 15 minutes. Strain and run under cold water. Peel skins off beets and chop into quarters.
2. Preheat oven to 400 degrees F.
3. Coat a baking sheet covered with aluminum foil with cooking spray. Lay beets and onions on pan and coat with cooking spray. Spoon 2 tablespoons of honey on top of vegetables. Bake for 40 minutes or until beets are soft.
4. Move beets and onions to a serving bowl.
5. Whisk 2 tablespoons of honey with vinegar, oil, and garlic. Spoon dressing over beets. Toss mixture with currants and walnuts. Sprinkle with salt, pepper, and parsley.
