3 tbsp  sugar
1 1/2 tbsp  cornstarch
0 3/4 cup  cold water
3 tbsp  cider vinegar
2 tsp  margarine
1 pinch  salt
1 pinch  black pepper
1 lb  cooked sliced beets
1 pinch  chopped parsley
  1. Combine sugar and cornstarch in a saucepan.
  2. Mix in water and vinegar and bring to a boil. Whisking continually, continue boiling 1 minute or until mixture is thick. Remove from heat.
  3. Mix in margarine and sprinkle with salt and pepper.
  4. When ready to serve, spoon sauce over beets and top with parsley.
