2 tbsp  orange juice
2 tbsp  walnut oil
2 tbsp  white wine vinegar
0 1/2 tsp  grated orange peel
1 pinch  salt and pepper
4 cup  Greens, Belgian endive, fresh
0 1/2 each  fresh spinach, 10 oz. package
2 each  Oranges, navels, fresh, 2 7/8"
0 1/2 cup  Cranberries, dried
0 1/4 cup  chopped walnuts
  1. In a small bowl, make the dressing by whisking together the orange juice, walnut oil, vinegar, orange zest and salt and pepper.
  2. Place the endive, spinach, oranges, cranberries and walnuts in a large bowl, add in the dressing, and gently toss to coat.
