1 1/2 lb  flank steak
1 pinch  salt and pepper
0 1/2 cup  Salsa, chipotle, chunky
4 oz  Soda, cola
0 1/4 cup  packed light brown sugar
1 tsp  minced garlic
1 tsp  oregano leaves
6 each  Tortilla, flour
1 each  chopped green bell peppers
1 each  medium onions
0 1/2 cup  low fat cheddar cheese, shredded
  1. Trim any excess fat from the steak. Season with salt and pepper if you desire.
  2. In a 2 quart glass pan mix together the chipotle salsa, cola, brown sugar, onions, peppers, garlic, and oregano. Add the meat and cover with plastic wrap. Refrigerate for at least an hour.
  3. When ready, grill, broil or pan sear over high heat for approximately 5 to 8 minutes per side (flank steak should be served rare).
  4. Slice the meat thinly on an angle against the grain and serve with warm tortillas and peppers and onions.
