1 cup  orange juice
1 cup  cold water
1 tsp  olive oil
2 cup  couscous
2 cup  Oranges, navels, fresh, with o membranes
1 cup  fresh baby spinach
0 1/2 cup  chopped red bell peppers
0 1/2 cup  fresh chopped red onion
0.3333 cup  Cranberries, dried
0.3333 cup  chopped pecans
0 1/2 tsp  sugar
0.125 tsp  ground cayenne (red pepper)
  1. In a medium pot bring the orange juice, water, and olive oil to a boil. Stir in the couscous, remove from the heat and let stand for 7 minutes.
  2. Transfer into a large bowl and add the orange sections, spinach, bell pepper, onion, and cranberries.
  3. In a small nonstick skillet, over medium heat, add the pecans. Sprinkle with the sugar and cayenne and cook for about 5 to 7 minutes.
  4. Remove from the heat to cool. When ready to serve, use any low-fat, low-calorie dressing.
