Wash and drain the beans. Cover with cold water and soak for at least 3 hours.
Rinse the beans. Add 2 1/2 quarts water and the ham, salt, and bay leaves or bouquet garni bag. Simmer, covered, for 2 to 3 hours.
In a saute pan, heat the olive oil. Add the onions and garlic and saute for 5 minutes. Add the chicken, tomatoes, celery, and hot sauce. Continue sauteeing for another 10 minutes. Add mixture to the beans and simmer for 20 minutes. Serve hot.
