Ingredients Directions
  1. Preheat oven to 375 degrees F.
  2. Using a food processor or blender, puree chilies and red peppers until finely chopped.
  3. Wash and dry pork.
  4. Pour oil in an oven-proof skillet and heat over medium heat.
  5. Sauté onion and garlic 8 to 10 minutes then spoon onion mixture into a bowl and set aside.
  6. Arrange pork chops in skillet and cook 3 to 5 minutes per side until browned.
  7. Mix in onion mixture, pureed jalapeno mixture, and wine.
  8. Place lid over pan and bake in preheated oven 1 1/2 hours or until meat is very tender and falls easily off the bone.
  9. Remove lid, stir, and cook another 10 minutes until sauce becomes thick.
  10. Move pork to a serving platter and serve with sauce. Top with parsley, salt, and pepper.
