Ingredients Directions
  1. Peel the sweet and white potatoes and cut into 2-inch chunks. Place them in a microwaveable casserole dish along with ½ cup water.
  2. Microwave for 12 to 15 minutes and then drain.
  3. In a small bowl, whisk together the olive oil, parsley, cayenne, salt and pepper. Pour over the potatoes.
  4. Thread the potatoes and bell peppers onto skewers.
  5. When ready, grill the kabobs for 15-20 minutes or until a nice brown crust forms.
