1 cup  Pasta, spaghetti, enriched, cooked
2 each  eggs
2 each  egg whites
0 1/2 cup  bread crumbs
0 1/2 cup  Sweet Potatoes, dark orange, fresh, cubes, USDA Commodity Commodity
0 1/2 cup  chopped zucchini
0 1/2 cup  chopped red bell peppers
0 1/4 cup  fresh chopped onion
2 tbsp  chopped parsley
0 1/2 tsp  cilantro, leaves, dried
1 each  whole jalapeno pepper
0 1/4 tsp  salt
0 1/4 tsp  white pepper
0.125 tsp  ground cayenne (red pepper)
1 each  cooking spray
  1. Combine linguine with eggs and egg white, breadcrumbs, sweet potato, zucchini, pepper, onion, parsley, tarragon, jalapeno, salt, and peppers in a bowl.
  2. Coat a frying pan with cooking spray, and place over medium heat.
  3. Pour half the mixture into the pan and spread evenly to form a cake.
  4. Cook 3 to 4 minutes, flip and cook 3 to 4 minutes on other side.
  5. Continue with other half of mixture. Slice pancakes in half and serve with pesto or pasta sauce.
