0 3/4 lb  Pork, tenderloin, lean, raw
1 tbsp  olive oil
0 1/2 tsp  ground cumin
2 cup  fresh strawberries
1 tsp  sweetener (sugar substitute)
0 1/4 cup  fresh chopped red onion
1 pinch  tabasco sauce
1 tbsp  fresh lime juice
1 pinch  salt and pepper
4 tbsp  fresh cilantro
  1. Pre-heat broiler.
  2. Trim fat from pork and cut filet in half lengthways.
  3. Brush both sides with olive oil and sprinkle with 1 teaspoon ground cumin, salt and pepper.
  4. Place pork on broiler tray and broil for 5 minutes. Turn and cook for another 5 minutes. Test pork with a meat thermometer that should read 160 degrees F.
  5. While the pork cooks, place strawberries in a medium-sized bowl and sprinkle with sweetener.
  6. Add onion and hot pepper sauce.
  7. Mix the remaining 1/3 teaspoon cumin and lime juice together and drizzle over berries.
  8. Add salt to taste.
  9. Toss well and sprinkle with cilantro.
  10. Serve pork with salsa on top.
