2 lb  boneless skinless chicken breasts
8 oz  dried apricots
0 1/2 cup  fresh chopped green onion
0 1/2 cup  fresh chopped celery
0.3333 cup  light mayonnaise
0 1/4 cup  Mustard, honey, smoooth
2 tbsp  Mustard, honey, whole grain
2 tbsp  fresh lemon juice
2 tbsp  fresh rosemary
0.3333 cup  sliced almonds
  1. Shred the chicken with a fork into a large bowl. Then add the apricots, green onions, and celery. Mix well.
  2. In a small bowl, mix together the mayonnaise, honey mustard, grainy mustard, lemon juice and rosemary.
  3. Add the chicken and almonds. Refrigerate before serving.
