1 each  cooking spray
6 oz  fresh mushrooms
2 each  scallions
4 each  eggs
1 oz  cream cheese
1 pinch  black pepper
1 tsp  fresh thyme
  1. Coat nonstick sauté pan with cooking spray.
  2. Cook mushrooms and scallions over medium-high heat for approximately 5 minutes.
  3. Lower heat to medium. Add eggs and cheese.
  4. Cook for approximately 10 seconds without stirring. Lift edges of omelet to allow uncooked eggs to run underneath.
  5. When eggs are cooked through, fold omelet in half and move to serving plate.
