Ingredients Directions
  1. Place 4 egg whites and 2 whole eggs in a microwave-safe bowl.
  2. Add turkey, Parmesan cheese, and salt and pepper to taste. Whisk with a fork.
  3. Microwave on high for 1 minute. Stir.
  4. Microwave for an additional 30 seconds and stir again.
  5. Arrange lettuce leaves on 2 plates and place tomato slices on top. Spoon eggs onto plate.
