2 tbsp  balsamic vinegar
1 tbsp  olive oil
1 tbsp  light mayonnaise
2 tbsp  chopped parsley
2 each  medium garlic cloves
2 tsp  sweetener (sugar substitute)
1 tbsp  cold water
1 pinch  salt and pepper

2 each  head Boston lettuce
1 each  Cucumber, with skin, fresh, 8 1/4" long
2 each  medium celery stalk
8 each  scallions
0.125 cup  sliced almonds
  1. Mix all the dressing ingredients in a food processor or blender, or shake in a glass jar.
  2. If the dressing is too thick, add 1-2 teaspoons of water.
  3. Put vegetables in a large bowl. Toss gently with dressing to coat. Add roasted almonds.
