2 cup  romaine lettuce
2 each  medium kiwi, peeled
1 each  Oranges, medium, fresh
1 1/2 tbsp  olive oil
3 tbsp  apple cider
1 tsp  fresh lemon juice
1 tbsp  cold water
1 tsp  sweetener (sugar substitute)
1 pinch  salt and pepper
  1. Wash lettuce and tear into bite-sized pieces. Spin or pat dry.
  2. Put on a serving platter and top with kiwis and oranges arranged in a circular pattern.
  3. Combine the oil, vinegar, lemon juice, water, sugar substitute, salt and pepper in a small bowl.
  4. Whisk until blended. Drizzle the dressing over the salad.
  5. Garnish with red onion rings and almonds.
  6. Garnish: 1 medium red onion, peeled and sliced into rings. 2 tablespoons slivered or sliced roasted almonds.
