In a deep pot, prepare onions, scallions, and garlic the Enlitened way (Spray non-stick skillet with spray and heat oil over medium, add leeks, onions, cook until brown, stir in garlic cloves and a few drops water, cook for a few more minutes.)
Add cauliflower (no need to defrost), salt and pepper and soup powder.
Add just enough water to cover the contents. Bring to a boil.
Lower heat and boil for 15-20 minutes. Remove from heat, cool, and blend. (It is best to use an immersion blender directly in the pot for this.)
