2 cup  white all purpose flour
1 tbsp  low sodium baking powder
1 tsp  ground cinnamon
0 1/2 tsp  ground allspice
0 1/2 tsp  salt
2 cup  shredded carrots
0.3333 cup  vegetable oil
1 each  Eggs, large, raw
1 each  egg whites
0.6667 cup  sugar
0 1/4 cup  Milk, evaporated, nonfat/skim
1 tsp  vanilla extract
0 1/2 each  seedless raisins
0 1/2 cup  chopped pecans
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix together the first five ingredients.
  3. In a smaller bowl, mix together the carrots, oil, egg, egg white, sugar, milk, and vanilla.
  4. Stir the carrot mixture into the dry ingredients. Add the raisins and the pecans.
  5. Lightly grease a 9x5x3" loaf pan. Pour batter into loaf pan and bake for 1 hour, or until toothpick inserted in the center comes out clean. Cool loaf in pan for 5 minutes. Invert onto a rack to cool completely.
