6 cup  cold water
0 1/4 cup  bonito flakes
2 tbsp  light yellow miso paste
2 tbsp  red mellow miso paste
0 1/2 tsp  low sodium soy sauce
0 1/2 cup  enoki mushrooms
4 oz  firm tofu
  1. In large bowl, mix water and bonito. Let soak 2 minutes.
  2. Strain mixture through fine mesh strainer into large pot. Discard solids.
  3. Warm liquid on low heat.
  4. Remove 1/2 cup of warm liquid into small bowl. Add yellow and red miso, and soy sauce to warm water. Whisk with until well blended.
  5. Bring remaining broth to simmer (do not boil) and add miso mixture.
  6. Divide mushrooms and tofu into 6 bowls. Ladle 1 cup of soup into each bowl.
