8 oz  Dates, pitted
1 tbsp  white all purpose flour
0 1/2 cup  cold water
0 3/4 cup  flaked unsweetened coconut
0 1/2 cup  Margarine, soft, 80% fat
0.3333 cup  sweetener (sugar substitute)
2 1/2 cup  quick cooking rolled oats
0 1/2 tsp  vanilla extract
1 each  cooking spray
  1. In a large mixing bowl, combine the chopped dates and flour. Toss lightly.
  2. Place the water in a 1-cup glass measuring cup and then microwave on high for 2-3 minutes, or until it boils. Pour the water over the dates.
  3. Add the coconut, margarine, and sugar substitute to the date mixture, and stir well. Microwave on high for 2 to 3 minutes, or until thickened. Sit at 1-minute intervals.
  4. Add oats and vanilla to the date mixture, stir well. Spoon the mixture into a 9-inch baking square baking pan coated with cooking spray. Press evenly into the bottom of the pan.
  5. Cover and refrigerate until set. Cut into 24 bars.
