1 tbsp  dijon mustard
4 each  boneless skinless chicken breasts
2 tsp  olive oil
0 1/2 cup  Salsa
2 tbsp  fresh lime juice
0 1/4 each  fresh avocado
2 tbsp  fresh chopped green onion
  1. Coat one side of chicken breasts with mustard. Pour oil in a large frying pan and heat over medium-high heat. Lay chicken breasts, mustard side down in pan and sauté 4 minutes. Flip chicken over and lower heat to medium.
  2. Mix together salsa and lime juice. Pour over and around chicken. Simmer 6 to 8 minutes, until chicken is fully cooked and sauce begins to thicken.
  3. Move chicken to a serving platter. Continue to cook the liquid 30 seconds until it is reduced.
  4. Pour sauce over chicken and top with avocado and green onions.
